While I don't do a ton of flowcharting and graphing, I am a sucker for a great user interface (UI) and that's exactly what InstaViz gives me. While this App is a "+" App and it works on your iPhone, iPod touch or iPad, it really sings on the iPad. I love how I can use simple finger gestures and the App automatically converts them into vector shapes. I can add colors and text and then easily share my ideas in various formats. Rather than tell you about how cool this App is, it's easier to show you. Check out this video:

I’d add that at $9.95 it’s one-fifth the price of OmniGraffle’s $49.95. Even if it doesn’t do everything the latter does, it may do enough for many users.

Can you connect objects with, say, curvy (bezier) lines?
It’s really too bad that it only exports editable files to Windows based applications. Maybe they’ll expand those choices soon.

@Reese: When you connect objects, the app decides whether to use straight lines or beziers for the best layout. Instaviz exports to Graphviz GV, PDF, PNG and Visio VDX — the first three formats work on Mac OS X. You can also download my free viewer/printer application http://instaviz.com/instavue/ with loads more export options including SVG, Postscript etc.
It doesn’t appear that you can connect a node to itself. This is disappointing as I was hoping to use it to create state transition diagrams.
Other than that, it’s impressive and intuitive.
